His culinary genius has set him apart as one of the most influential chefs of all time, and the father of avantgarde cuisine. Ferran’s mission is to discover ‘the limits of the gastronomic experience’ and he has clearly achieved it. Working in his kitchen at the famous El Bulli in 2005 played an important role in my career and in the later formation of the culinary concept of avant-garde Greek cuisine. Ferran told me, ‘You have to be organised in order to be an anarchist’. This simple piece of advice has proved its wisdom many times throughout my culinary life. So companies like London Glassblowing, which this year marks a decade in its current gallerycum-studio in Southwark, are worth celebrating. Founded in 1976 by Peter Layton, a pioneer of the studio glass movement in the UK, the company has long been a hot house for new talent by providing facilities for resident artists. Picking one out is invidious but I’m a big fan of Morten Klitgaard’s work. The Danish artist experiments with removing the material’s transparency, creating a pocked, glaze-like appearance to his pieces. He has reinvented their classic trench coat for Autumn/ Winter 2019 to oversized proportions, allowing the more relaxed fit to be worn with tailoring and off-duty staples alike.
